Delicious Bacon and Egg Breakfast Cupcakes

Ingredients:
1 pound of bacon
1 dozen eggs
1 medium yellow onion
2/3 cup shredded cheese
1/2 teaspoon ground pepper
1/2 teaspoon salt
1/4 teaspoon smoked paprika
diced red onions (optional topping)
pico de gallo (optional topping)
black olives (optional topping)
guacamole (optional topping)
your favorite hot sauce/taco sauce (optional topping)
Directions:

Preheat oven to 350 degrees F.
Dice yellow onion and cut bacon into 1" pieces.
In a large skillet, cook bacon and onions over medium heat until bacon begins to brown and onions are turning translucent - about 5 minutes. Place bacon and onions on a paper towel-lined plate to capture excess grease.
Grease a pan of twelve muffin cups and then evenly add the bacon and onion mixture.
In a bowl, whisk eggs and seasoning, then stir in 1/2 cup of shredded cheese (we use dairy-free). Save 1/3 cup for finishing/topping.
Evenly pour the egg mixture into greased muffin cups. (We use a small ladle for consistent servings.)
Bake for 12 minutes, then remove to add shredded cheese to the top and place the muffin pan back in the oven for 5 additional minutes or until the cheese is melting.
Once a toothpick comes out clean from the center, remove it from the muffin pan immediately and place it on the cooling rack, then plate it after a couple of minutes.
Add your favorite toppings like guacamole, red onions, black olives, hot sauce, pico de gallo, or taco sauce.

This dish is very versatile, and the bacon can be replaced with breakfast sausage, diced ham, or diced-up leftover Thanksgiving turkey!
