Simple and Delicious Shredded Pork Breakfast Tacos

This delicious and easy breakfast taco recipe is sure to have the kids asking for second and is part of our meal prep group of recipes!

This recipe has been tried and tested on adults and children from teens to toddlers and every age in between! We always prepare extra corn tortillas because everyone is going back for seconds!

As part of our meal prep, this shredded pork really raises our breakfast game to new levels as well as our dinners. The versatility in toppings and tortillas can quickly please many discerning palettes while giving everyone the balanced meal they need.


Simple and Delicious Shredded Pork Breakfast Tacos


Ingredients:

Here is everything you'll need:

  • Shredded Spicy Pork  

  • 8 eggs

  • corn tortillas (about 2 per person)

  • diced red onions (optional topping)

  • fresh cilantro, rough cut - (optional topping)

  • tomatoes, diced (optional topping)

  • lime (sliced into wedges)

  • Shredded Cheese (optional topping - We use Dairy free shredded cheese or dairy free soft cheese)

  • Black Olives (optional topping)

  • Taco Sauce (optional topping)

  • Salt and pepper to taste

Directions:

  1. Fry some corn tortillas (about2-3 per person and make a few extra for seconds.)

  2. If you have already made this as a meal prep plan, reheat the shredded pork in a pan with lime juice and serve from the pan versus from the crock pot into the pan.

  3. Whisk eggs in a bowl with salt and pepper to taste and mix eggs with the shredded pork.

  4. Once the eggs are cooked, using tongs, place meat and eggs in the center of the tortilla with enough shredded pork and egg to cover the center third of the tortilla. this will vary some based on who you are plating for (kids or adults)

  5. Top with the individuals favorite taco toppings.

  6. Serve with limes and guacamole.

Additional Notes:


This takes about 10 minutes to make if you already have your shredded pork made as a meal plan which makes it ideal for a weekday breakfast before the kids head out the door. You can replace corn tortillas with flower and easily make these into breakfast burritos as well!
