Easy and Delicious Shredded Pork Tacos

This delicious and easy taco recipe is sure to have the kids asking for second and is part of our meal prep group of recipes!

This recipe has been tried and tested on adults and children from teens to toddlers and every age in between! We always prepare extra corn tortillas because everyone is going back for seconds!
These tacos are robo-good! – Jameson, 6 - picky eater with a creative vocabulary.
Imagine coming home from work to the aroma of slow cooked pork that is so tender, shredding with a fork takes less than a minute. Imagine further having a dinner with your family that is so good the kids barely make a sound because they love what they're eating! This is the dream sometimes, right parents? Enjoy the happy silence!
Easy and Delicious Shredded Pork Tacos

Ingredients:
corn tortillas (about 3 per person)
diced red onions (optional topping)
fresh cilantro, rough cut - (optional topping)
tomatoes, diced (optional topping)
lime (sliced into wedges)
Shredded Cheese (optional topping)
Black Olives (optional topping)
Taco Sauce (optional topping)
Directions:
Fry some corn tortillas (about 3 per person and make a few extra for seconds.)
Using tongs, from your crockpot, place in the center of the tortilla enough shredded pork to cover the center third of the tortilla. this will vary some based on who you are plating for (kids or adults)
If you have already made this as a meal prep plan, reheat the shredded pork in a pan with lime juice and serve from the pan versus the crock pot.
Top with the individuals favorite taco toppings.
Serve with limes, guacamole, beans and Spanish rice (we use Conchita Yellow Rice, Spanish Style)

Pro tip: Some of the kids have texture issues with diced tomatoes so I use small grape sized tomatoes and slice in half.
We use tortilla holders and it does wonders with the kids keeping their tacos together.
