Gluten Free Penne with Spicy Italian Sausage

This tried and true recipe has been tested on family for a while now while using different pasta types. Penne and Spaghetti are the two favorites around here!

The beautiful thing about this recipe is how versatile it is. Short dictator in the first grade only eats spaghetti today because a cloud looked like a dinosaur? No problem. Pre-teen diva is tired of spaghetti because we "eat spaghetti every day" AKA we had spaghetti two weeks ago? No problem. Change the type pasta or change the heat level of the Italian sausage and forecast for smiles increases dramatically.
Gluten Free Penne with Spicy Italian Sausage
Ingredients:

2 pounds uncooked gluten-free penne
2 pounds spicy Italian sausage
2 can diced tomatoes
6 cloves garlic minced
Medium size yellow onion, diced.
1/2 cup chopped fresh basil
salt and pepper (to taste)
grated parmesan (we use dairy free)
sliced black olives (optional)
Serves 8
Directions:

In a large pot, bring salted water to a boil. Cook pasta according to the directions on the package.
In the meantime, cook Italian sausage over medium high heat stirring in a large pan, occasionally until brown, about 7-8 minutes.
Once sausage is browned, remove from pan and transfer to plate or bowl.
In the same pan, sauté onion, garlic and tomatoes until onions are translucent.
Add the Italian sausage back in and cook a few more minutes and salt and pepper to taste.
Prior to serving toss in drained pasta and plate.
Garnish with fresh basil and parmesan.
Additional Notes: I typically have the butcher at our store pull out two pounds ground Italian sausage from the case however if you don't have access to this typically 6-8 Johnsonville or a store brand sausage link will do. Just remove the casing. If the spicy is too hot, mild Italian Sausage is available as well.
