Delicious Chimichurri

One of the things we have begun using in our home is chimichurri. Originally from Argentina and Uruguay, this delicious condiment is a great addition to grilled meats but can also be used as a marinade and a salad dressing!
Ingredients:
1 cup extra virgin olive oil
4 tablespoons red wine vinegar
1 cup finely chopped parsley
7-8 minced cloves of garlic
4 small chilies deseeded and finely chopped or (4 tablespoons of crushed red peppers)
1/3 cup finely chopped oregano
2 teaspoons course sea salt
1 teaspoon ground black pepper
Mix all the ingredients in a medium sized mixing bowl and allow to sit for 10-15 minutes minimum however for the best infusion of flavors at least an hour. We make ours the day before and baste boneless chicken thighs with it. See our Chimichurri Chicken recipe. You can also use it as a garnish with a couple tablespoons over your steak, pork loin, bison, elk, or even lamb.
Chimichurri can also be used to baste steaks, chicken or your favorite meat on the grill.
We store our chimichurri in a mason jar and refrigerate until gone in about a week.
