Easy Gluten Free Banana Bread Muffins

If your home is like mine, a fun and entertaining thing to do is buy bananas to watch them turn black on a banana hanger on the kitchen counter.


Fortunately my almost 17 year old daughter loves to bake and keeps us in a steady supply of banana bread muffins!


This simple recipe is sure to make use of the bananas your kids ask for and don't eat!









Ingredients:

3 very ripe bananas

1/2 cup melted butter (unsalted)

3/4 cup organic granulated sugar

2 large eggs

1 1/2 cup gluten free all purpose flour - we use Bob's Red Mill

1 teaspoon baking soda

1/2 teaspoon fine sea salt

1/2 teaspoon vanilla extract

1 cup crushed pecans


Makes approx. 12-15 muffins.






Instructions:


Preheat oven to 350 degrees. Grease muffin pan or use muffin/cupcake baking cups. Lightly roast crushed pecans and then set aside to cool.


Mash bananas with a fork until the consistency of chunk applesauce and set aside


In a mixing bowl , mix together flour, baking soda and salt.


In a separate bowl mix together butter, sugar and mashed bananas. add in mashed bananas, mixed dry ingredients, and mix together before adding vanilla extract and pecans.


Once everything is mixed consistently, add the mixture to your prepared muffin pan or baking cups. Bake at 350 degrees for 25-30 minutes or until toothpick inserted in center comes out clean. remove from pan and let cool for 10 minutes, then enjoy!
